- Evaluation of some physical, chemical and sensorial properties of eggplant submitted to different drying treatmentsPublication . In Turkey, for example, eggplants are dried in the sun hung up with a string. Although it is a very economic method, it has many disadvantages and has been replaced by other drying methods, like hot air drying. This work intended to analyse the differences originated by drying in eggplant slices when submitted to different temperatures (50, 60, 70, 80 ºC). The characteristics evaluated were some chemical properties (moisture, water activity and vitamin C, total phenols and antioxidant activity), physical characteristics (colour coordinates and textural parameters) also at the sensorial level. All experiments followed standard established procedures and the values obtained resulted from the calculation of the mean and standard deviation considering the different replicates made. The results showed that the moisture varied from 90% in the fresh sample to 16-26% on the dried samples, depending on the temperature. The water activity of the dried samples varied from 0.96 in the fresh sample, a high value that allows degradation of the product to a value in the range 0.63-0.76 for the dried samples, allowing a better preservation. The vitamin C, which is a thermosensitive vitamin, decreased with drying, with variations going from 41% at 50 ºC to 74% for the highest temperature (80 ºC). The contents of phenolic compounds and the antioxidant activity were also influenced by drying temperature. The total colour difference between the dried samples and the fresh sample was found to vary in the range 17.5 – 18.8. As expected, also texture was considerably altered with drying. Hardness decreased (by 16-20%), and so did adhesiveness or cohesiveness while elasticity increased from the fresh to the dried samples. The sensorial analysis made to the dried samples allowed concluding that the sample dried at 70 ºC was slightly more appreciated by the panellists.
- A procissão dos livros: Performance de leitura ritualizadaPublication . Almeida, Lina; souto e melo, ana luísa; Balula, João PauloA leitura é, cada vez mais, uma atividade imprescindível para ajudar a compreender o mundo que nos rodeia, altamente potenciadora do progresso social, tendo assumido, muitas vezes, ao longo dos tempos, um estatuto de ritual. A associação da leitura ao ritual, enquanto pensamento em ação, quando mobilizada para a criação de espaços e contextos artísticos, encontra na Performance uma manifestação que atualiza, a partir das necessidades individuais e coletivas, o universo de experiências dos participantes, através da manipulação do corpo e de elementos simbólicos. Assim, no âmbito de um Mestrado em Animação Artística, foi desenvolvido o projeto “A Procissão dos livros” com o objetivo de criar espaços e contextos artísticos urbanos, envolvendo a comunidade, capazes de promover a consciencialização da importância da leitura a partir de um processo reflexivo de manifestação cultural comunitária. Neste trabalho, pretendemos apresentar o projeto e partilhar a reflexão desenvolvida na sua implementação. A Performance “Procissão dos livros”, inspirada no ritual, percorreu as ruas de uma cidade, culminando numa Instalação (“Iluminados por um livro”), patente, primeiro, na Biblioteca Municipal e, depois, no átrio principal de uma instituição de Ensino Superior. Esta apropriação do ritual, da Performance e da Instalação para a promoção da leitura interpelou, ao longo de vários meses, um público diversificado, permitindo-lhe uma forma diferente de fruir a arte, ao mesmo tempo que o convidava a refletir sobre a importância da leitura e da partilha do espaço e do tempo em que performer e público são cúmplices e construtores de comunidade. ABSTACT The procession of books: reading performance ritualized Reading is an essential activity to help us to understand the world around us, highly potentiating social progress, having taken many times over the years, though owner of a ritual status. The association of reading to ritual, while thinking in action, when mobilized for the creation of spaces and artistic contexts, is a performance manifestation in updating. From the individual to collective needs, the experiences of the participants are universal as they manipulate the body and symbolic elements. Thus, under a Master of Arts Recreation, it was developed the project “The Procession of the books” in order to create spaces and urban artistic contexts, involving the community, able to promote awareness of the importance of reading from a reflective process of community cultural event. In this work, we intend to present the project and share the reflection developed in its implementation. The performance “Procession of the books”, inspired by the ritual, ran through the streets of a city, culminating in an installation (“Enlightened by a book”), patent, first, in the Municipal Library, and then in the main lobby of an education institution. Over several months, this appropriation of ritual, performance and installation for the promotion of reading questioned a diverse audience, allowing them a different way to enjoy art, while inviting people to reflect on the importance of reading and sharing space and time, performer and audience, as community partners and builders.
- An insight of Romanians’ knowledge about dietary fibers in relationship with cancerPublication . Tarcea, Monica; Fazakas, Zita; Ruta, Florina; Rus, Victoria; Salcudean, M.; Nemes, L.; Serban, Costela; Guiné, RaquelObjectives: To estimate the relationship between socio-demographic characteristics of Romanian population, and their knowledge towards dietary fiber intake, the information sources preferred and perception of cancer related health risks. Methods: We used a convenient cross-sectional survey, and the data were collected using a validated questionnaire, disseminated online. Six different Romanian counties with 57 cities were selected in 2015, with 670 participants, and we used the SPSS program 22.0 for statistical purpose. Results: The knowledge about dietary fibers intake was low in our sample, also was the ingestion of foods rich in fiber (fruits, vegetables and cereals). Compared to men, women agree significantly more frequent that fibers in appropriate amounts can prevent or treat diseases (U=44607, z=-4.66, p<0.001, r=0.18) and separately related to specific diseases, that fibers can prevent and/or treat cardio-vascular diseases, cholesterol, bowel cancer, breast cancer, constipation, and diabetes, but with no differences regarding the deficiency of vitamins and minerals (p=0.774) or obesity (p=0.399). The in-depth analysis of factors that are able to influence Romanian’s knowledge and attitudes towards food fibers, defined the social profile of the respondents with interest on dietary fiber intake, which is: young females, with at least high school education, that considers internet and television like main sources of information regarding fibers. Comparing to other EU countries, Romanian consumers have good information about dietary fibers importance for health but the daily intake is lower. Conclusions: Based on our results, we can elaborate efficient community and school intervention programs, more focused on modern information technology and communication skills, fit to the consumer’s profile in order to promote a healthy nutrition behavior and proper knowledge.
- Production of salted biscuits with mushroom flourPublication . Correia, Paula; Esteves, Sabrina; Guiné, RaquelThe purpose of this work was the development of an innovative salted biscuit produced with partial replacement of wheat flour by Shiitake mushroom flour, to be used as a snack food or a food starter. The mushroom flour was produced by drying the mushrooms at 40, 50, and 60ºC, with the evaluation of moisture content, water activity and color parameters. Then, salted biscuits were prepared with these flours in the proportions of 5%, 10% and 15%. The produced biscuits presented low moisture content and water activity, meaning that they were within the estimate limits for these products to be considered stable, since they have values below 4% and 0.6 respectively. The color analysis revealed that the products tend to be darker, lower L* values, with the increase of the mushroom flour proportion, and were also darker for flour produced at higher drying temperatures. The same tendencies were also observed for a*, being redder as the proportion of mushroom flour and temperatures increased. Regarding b*, small differences were observed for yellowness. Generally, the hardness of the biscuits increased with the increasing of the introduced mushroom flours and the dry temperature used for mushroom flours production, ranging from 40 N to 58 N. However, the results of sensorial evaluation indicated that the panellists were not able to differentiate this property. The major differences between the produced biscuits were the taste, aroma and color, being the textural properties considered by the panellists as very closed. The most appreciated salted biscuit was the one produced with 15% of mushroom flour, independent of the drying temperature used for mushroom flour production. This biscuit presented good nutritional properties, with high carbohydrate and moderate content in protein (6.4%) and fibre (1.6%),with high energy (1854.75 kJ/ 100 g of product), but on the other hand it also presented high content of salt (0.97%).
- Contribution for the physical-chemical characterization of Portuguese Crowberry (Corema album)Publication . Andrade, Sónia C.; Gonçalves, Fernando; Guiné, RaquelThe present work was undertaken to study some physic-chemical characteristics of Portuguese crowberry, namely: sizeable properties (dimension and weigh), chemical components (water, crude fiber, total and reducing sugars, total soluble solids and acidity), and finally physical characteristics (color and texture). The determination of the chemical components followed standard procedures, for color a colorimeter was used and texture was evaluated by a texturometer. The results obtained indicated that the Portuguese crowberries showed a mean diameter of about 9 mm, and a mass of ~0.7 g. Relating to the chemical analyses, the moisture content was 88 % (expressed in fresh weight), the crude fiber was 37 % (dry basis), the total and reducing sugars were 63 % and 41 % (dry basis), respectively. The total soluble solids were ~6 ºBrix and total acidity was 11 % (expressed in citric acid). Hence, the work undertaken permitted concluding that the white crowberries at study constitute an important source of fibers and sugars.

Escolhidas as instituições a comparar, encontramos o foco de todo o projeto, a comunicação estratégica digital em - e para - instituições culturais e que inclui um conhecimento das instituições, o mapeamento dos públicos e a conceção de uma estratégia de comunicação digital para o Norte de Portugal e Galiza.
- Phisical activity in the elderly : importance in balance and risk of fallsPublication . Martins, Rosa; Andrade, Ana; Martins, Conceição; Campos, SofiaMaintaining physical exercise in the elderly is fundamental, as it strengthens physical fitness, increases autonomy, reduces imbalance and reduces risk of falls. Thus, it is important to identify the risk of falls in the elderly and to determine correlations between this risk, sedentarism/ physical activity (PA) and body mass index (BMI). It is a cross-sectional, descriptive-correlational and quantitative study. A non-probabilistic sample consisted of 124 elderly individuals, 68 females and 56 males, aged 65-88 years (M = 71.9; Dp = 5.05). The data collection instrument included questions of sociodemographic characterization, health profile and the Berg Balance Scale (BBS). The results show that only 12.9% of the elderly present levels of recommended physical activity. The risk of falls is high to 13.8%, of the elderly, medium to 55.6% and low risk to 30.6%. The risk of falls is higher in older people (p = 0.000), those with higher BMI (p = 0.023), and less physical activity (p = 0.000). There were no statistically significant differences between men and women (p = 0.668). Evidence shows that an increase in PA and maintenance of BMI within normal values translates into lower levels of imbalance and risk of falling in the elderly. Thus raising the awareness of the elderly and caregivers about these factors should be a strategy to develop, in order to provide an active and healthy aging.
- Reiki complementary therapy in nursing practicePublication . Martins, Rosa; Cunha, Cristina; Andrade, Ana; Albuquerque, Carlos; Cunha, MadalenaReiki is a therapy performed by placing hands on specific points in the body and using energy transfer to provide a natural well-being. The Nursing also presents within its specific interventions, an essential part based on the touch to the person to whom it cares, being therefore important to have correct knowledge on these techniques. Thus the study intends to evaluate the knowledge that the nurses have about Reiki and to identify determining factors in this knowledge. It is a cross-sectional, descriptive and correlational study, carried out in a non-probabilistic sample by convenience, consisting of 49 nurses with a mean age of 38.96 years, working in health institutions in the central region of Portugal to whom was applied a questionnaire to evaluate knowledge about Reiki, which was developed for this purpose by the researchers. We found that 59.1% of the Nurses had reasonable knowledge, 38.6% had high knowledge and only 2.3% had low knowledge. Knowledge was higher in nurses who had already received Reiki treatment (p = 0.032) who had differentiated care (p = 0.019) who were holders of the master degree (0.040) and had a higher professional category (p = 0.016). We conclude that the knowledge of nurses about Reiki is moderately positive and these are clearly superior in the group that performs functions in differentiated care when compared to those of primary care. On the other hand we found several factors that correlate with this knowledge and on which it is important to intervene in order to improve knowledge
- Trabalhos para casa no 1º ciclo do ensino básico no âmbito da matemáticaPublication . Lopes, Fabiana Cristina de Sousa; Menezes, Luís; Cardoso, Ana PaulaO presente relatório de estágio tem como objetivo dar a conhecer o percurso desenvolvido ao longo da Prática de Ensino Supervisionada (PES), no âmbito do Mestrado em Educação Pré-Escolar (EPE) e Ensino do 1.º Ciclo do Ensino Básico (1.º CEB) focando, em especial, os processos de formação desenvolvidos em contexto do 1.º ciclo do ensino básico (PES II) e da educação pré-escolar (PES III). A questão de investigação abordada na segunda parte do relatório foca a problemática dos Trabalhos Para Casa (TPC) no 1.º Ciclo do Ensino Básico no âmbito da Matemática. O estudo estabelece como objetivo saber quais são as perspetivas dos alunos e dos pais/encarregados de educação (EE) acerca dos trabalhos para casa na área curricular de Matemática e como as põem em prática. O trabalho de campo decorreu numa escola do 1.º CEB da cidade de Viseu, tendo os dados sido recolhidos através da aplicação de questionários aos alunos de duas turmas do 4º ano de escolaridade, da realização de entrevistas a quatro pais/EE das respetivas turmas e de registos, por parte das duas professoras das turmas referidas, de TPC realizados durante um mês. Este relatório de estágio mostra que os TPC são uma estratégia de ensino com larga presença nas duas turmas estudadas, fazendo parte do quotidiano dos alunos e das suas famílias. O tipo de TPC mais solicitado aos alunos na área curricular de Matemática passa por aplicação de fichas de trabalho envolvendo cálculo algorítmico e também resolução de problemas. O Português e a Matemática são as áreas curriculares em que os professores solicitam mais vezes trabalhos para casa. Em geral, os alunos gostam de realizar os trabalhos para casa e consideram-nos importantes para a sua aprendizagem. O estudo também mostra que os pais/EE se envolvem ativamente no apoio ao trabalho dos alunos em casa, apesar das dificuldades que experimentam nesse apoio.
