O ato de viajar muitas vezes representa mais que o preenchimento do ócio e o lazer.
Pode representar a realização de conhecer novos lugares, rever ambientes, ou a oportunidade
de uma ampliação cultural.
Considerando a ampliação cultural como opção do turista, imergir nos elementos
formadores da identidade de seu destino turístico é imperativo, como fonte básica/elementar de
informação da construção e formação da sociedade e economia de onde visita. Entre outros
elementos, o turismo gastronômico tem um papel social fundamental em seu destino turístico,
como elemento de manutenção e preservação da identidade do local visitado, e
consequentemente fonte geradora da sustentabilidade cultural e econômica.
Em nossa dissertação nos ocupamos em analisar o turismo gastronômico como
ferramenta de preservação do patrimônio cultural imaterial, onde foram feitos recortes para que
se contextualizasse a temática ao cenário presente. Foram desenvolvidas pesquisas no sentido
de avaliarmos a importância da gastronomia na valorização do destino turístico e preservação
dos seus bens imateriais, tais como: gastronomia e identidade cultural, turismo gastronômico e
o consequente desenvolvimento social e econômico. Abordamos as reações deste segmento
frente à possíveis ameaças, tais como a Globalização e a MacDonaldização. Os impactos da
pandemia do Coronavírus Sars-Cov 2 (Covid-19 II) também foi apresentado, entre outras
abordagens relevantes. Nossa dissertação tem por objetivo apresentar um estudo do turismo
gastronômico como parte integrante da cultura de um povo, e suas contribuições na formação
da sua identidade, assim como, seus impactos na sustentabilidade social e econômica de um
destino turístico, considerando que a herança cultural é o conjunto de hábitos, costumes,
formação familiar, orientação educacional, financeira, religiosa, e gastronômica, tendo-os como
suas referências e embasamento estrutural. Com a finalidade de uma abordagem teórica de cunho multidisciplinar, realizamos um estudo sobre os diferentes segmentos e vertentes,
respeitando os pontos de tangências e divergências apresentados entre si.
Salientamos que em nossa dissertação utilizamos as normas gramaticais em
conformidade com a Gramática da Língua Portuguesa Brasileira vigente.
ABSTRACT: The act of traveling often represents more than the fulfillment of leisure and leisure. It can represent the realization of knowing new places, reviewing environments, or the opportunity for cultural expansion. Considering cultural expansion as a tourist option, immersing yourself in the elements that form the identity of your tourist destination is imperative, as a basic/elementary source of information on the construction and formation of the society and economy where you visit. Among other elements, gastronomic tourism has a fundamental social role in its tourist destination, as an element of maintenance and preservation of the identity of the place visited, and consequently a source of cultural and economic sustainability. In our dissertation we are concerned with analyzing gastronomic tourism as a tool for the preservation of intangible cultural heritage, where clippings were made to contextualize the theme to the present scenario. Research was carried out in order to assess the importance of gastronomy in valuing the tourist destination and preserving its intangible assets, such as: gastronomy and cultural identity, gastronomic tourism and the consequent social and economic development. We address the reactions of this segment in the face of possible threats, such as Globalization and MacDonaldization. The impacts of the Coronavirus Sars-Cov 2 (Covid-19 II) pandemic was also presented, among other relevant approaches. Our dissertation aims to present a study of gastronomic tourism as an integral part of the culture of a people, and its contributions in the formation of its identity, as well as its impacts on the social and economic sustainability of a tourist destination, considering that the cultural heritage is the set of habits, customs, family background, educational, financial, religious, and gastronomic orientation, having them as their references and structural basis. With the purpose of a theoretical approach of a multidisciplinary nature, we carried out a study on the different segments and aspects, respecting the points of tangency and divergences presented between them. We emphasize that in our dissertation we used grammatical norms in accordance with the current Brazilian Portuguese Grammar.
