Abstract(s)
A agricultura biológica distingue-se de outros métodos de produção pela sua ação construtiva e equilibrada nos sistemas agrícolas. Paralelamente, tem aumentado a procura de frutos vermelhos, dado o seu elevado teor em compostos fitoquímicos biologicamente ativos, capzes de retardar o aparecimento de doenças, contribuindo para a saúde e bem-estar do Homem. Neste trabalho foram estudados três frutos vermelhos, a framboesa, a groselha e o mirtilo, produzidos em modo de produção biológico. As amostras dos frutos foram recolhidos em seis datas entre o início e o fim da maturação. Com a execução deste trabalho pretendeu-se estudar a evolução do teor em compostos fenólicos e da capacidade antioxidante destes frutos vermelhos ao longo da maturação. Os resultados obtidos mostraram que, no final da maturação, no mirtilo, de entre os frutos estudados, foi onde se obtiveram teores mais elevados de compostos fenólicos totais, antocianinas e taninos. A análise por HPLC permitiu identificar a presença de antocianinas monoméricas e de ácidos fenólicos (benzóicos e cinâmicos) na framboesa, na groselha e no mirtilo. Em relação à capacidade antioxidante determinada pelo método DPPH, os valores apresentados nos três frutos foram semelhantes. No método ABTS, foi no mirtilo que se obteve maior poder antioxidante no extrato metanol e na groselha no extrato acetona.
ABSTRACT: Organic farming differs from other methods of production for its balanced and constructive action in agricultural systems. Currently there has been increasing interest in organically produced food. In parallel, has increased the demand for fruits, given their high content of biologically active phytochemical compounds capable of delaying the onset of diseases, contributing to the health and welfare of man. This work studied three red fruits, raspberry, gooseberry and blueberry, produced in organic production. Samples of the fruit were collected in six dates between the beginning and the end of maturation. With the execution of this work was intended to study the evolution of the content of phenolic compounds and antioxidant capacity of red fruits throughout maturation. Results showed that by the end of ripening, the blueberry, among fruits studied, was the fruit where the higher content of phenolics, anthocyanins and tannins was obtained. HPLC analysis allowed to identify the presence of momomeric anthocyanins and phenolic acids (benzoic and cinnamic) in raspberry, gooseberry and the blueberry. Regarding the antioxidant capacity determined by DPPH method, the values were similar in the three fruits. In ABTS assay, in blueberry greater antioxidant power was obtained in the methanol extract while in the gooseberry that happened in the acetone extract.
