A segurança alimentar, representa uma das principais preocupações com que as autoridades, os agentes económicos e os consumidores se confrontam atualmente. O controlo da qualidade microbiológica é, não apenas, uma obrigatoriedade legal, mas também uma prática comum e necessária no âmbito do correto funcionamento dos sistemas de gestão da segurança alimentar implementados pelas empresas dedicadas à área alimentar. O presente trabalho foi desenvolvido no âmbito do curso de Mestrado de Qualidade e Tecnologia Alimentar em colaboração com a ALS Controlvet, Laboratório de microbiologia, e teve como principal objetivo melhorar um software preexistente para uma nova funcionalidade, nomeadamente, a gestão do controlo da qualidade dos meios de cultura, tornando assim todo o processo mais eficaz. A importância do desenvolvimento de uma “nova ferramenta “no âmbito da empresa advém do facto de se tratar de um laboratório de ensaios acreditados pelo Instituto Português de Acreditação, de acordo com norma NP EN ISO 17025. A norma NP EN ISO 17025 intitulada de “Requisitos gerais de competências para laboratórios de ensaios e calibração” é uma das normas aplicadas a Laboratórios de ensaios e calibração, e nela são abordados os mais variados assuntos e pontos de importante interesse em serem controlados num laboratório, como por exemplo questões ligadas à organização, controlo de documentos, instalações, equipamentos ou os métodos de ensaio e calibração e respetiva validação. Dentro de todo o processo efetuado em Laboratórios acreditados, o controlo dos meios de cultura é um ponto importante a ter em atenção em Laboratórios de microbiologia, na medida em que os meios de cultura são a base do trabalho.
ABSTRACT: Food security represents one of the main concerns facing authorities, economic agents and consumers today. The control of microbiological quality is not only a legal requirement, but also a common and necessary practice in the context of the correct functioning of the food safety management systems implemented by companies dedicated to the food area. The project work gave rise to this dissertation was developed within the scope of the Master's Degree in Food Quality and Technology, in collaboration with ALS Controlvet, a microbiology laboratory, and its main objective was to improve existing software for a new functionality, namely, the management of quality control of culture media, thus making the whole process more effective. The importance of developing a "new tool" within the company comes from the fact that it is a testing laboratory accredited by the Portuguese Institute of Accreditation, in accordance with standard NP EN ISO 17025. The standard NP EN ISO 17025 entitled “General competence requirements for testing and calibration laboratories” is one of the standards applied to testing and calibration laboratories, and it addresses the most varied subjects and points of important interest in being controlled in a laboratory, such as issues related to the organization, control of documents, installations, equipment or the methods of testing and calibration and respective validation. Within the whole process carried out in accredited laboratories, the control of the culture media is an important point to be controlled in microbiology laboratories, insofar as, the culture media are the basis of the work.
