- Cluster analysis to the factors related to information about food fi bers: A multinational studyPublication . Hence, this work intended to evaluate the level knowledge of about food fibres and investigate what factors might be associated with it. It was undertaken a descriptive cross-sectional study on a sample composed of 6,010 participants from ten different countries. The survey was based on a questionnaire of self-response, approved and complying with all ethical issues. The data collected were subjected to factor analysis and cluster analysis techniques. Validation was made by splitting the data set into two equal parts for confirmation of the results. Factor analysis allowed concluding that ten from the 12 variables used to measure the knowledge about dietary fibre should be grouped into two dimensions or factors: one linked to health effects of dietary fibre (α =0.854) and the other to its sources (α =0.644). Cluster analysis showed that the participants could be divided into three groups: Cluster 1 – Good knowledge both about sources and health effects of dietary fibre; Cluster 2 – Good knowledge about the sources of dietary fibre but poor knowledge about its health effects; Cluster 3 – Poor knowledge both about sources and health effects of dietary fibre. The data was appropriate for analysis by means of factor and cluster analysis, so that two factors and three clusters were clearly identified. Moreover, the cluster membership was found varying mostly according to country, living environment and level of education but not according to age or gender.
- Comparison of the ingestion of fibre rich foods in different countriesPublication . Florença, Sofia G.; Leal, M.; Rumbak, I.; Baric, I.; Komes, D.; Satalic, D.; Saric, M.; Tarcea, M.; Fazakas, Z.; Szucks, V.; Harangozo, J.; Klava, D.; Straumite, E.; Guiné, RaquelIntroduction: The ingestion of fruits, vegetables and cereals, especially whole grain, is associated with a healthy lifestyle and has been recognized as having multiple health benefits, associated, among others, to the ingestion of adequate amounts of dietary fibre. Objective: The aim of this work was to evaluate some eating habits related to fibre rich foods in six different countries: Argentina, Croatia, Hungary, Latvia, Portugal and Romania. Methods: A cross-sectional descriptive study was carried out by means of questionnaire survey applied to a sample of 4905 participants, all over the age of 18 years old. The preparation and application of the questionnaire followed the necessary ethical guidelines and the treatment was made by SPSS. Results: The results showed that for the global sample was observed a low ingestion of salads and vegetables (78.2%), being this particularly problematic for Croatia (86.6%). Regarding the consumption of fruits, for the whole sample the great majority also showed a low consumption (92.3%), and for Latvian participants the percentage is very much expressive (98.3%). As for the consumption of whole cereals, most participants also showed a low consumption, either for the global sample (72.6%) or in the different countries, and particularly for Latvia (90.0%). Some eating habits were also studied and it was observed that for the whole sample 71.9% showed a low frequency of meals ate out of home, while 88.6% revealed acceptable frequency of eating fast food, i.e, only once or twice a week. Conclusions: The results indicated that in the countries at study the ingestion of foods rich in dietary fibre is very low, and therefore it is necessary to implement strategies to increase the consumption of such foods.
- Consumers knowledge about dietary fibre : Results of a survey questionnaire in Hungary and RomaniaPublication . Even though the adequate level of their consumption can be ensured from several natural (e.g. fruit, vegetables, legumes) and ‘artifi cial’ sources (e.g. functional foods), the consumed levels are below the recommendations. To analyse the Hungarian and Romanian consumers’ knowledge level, their perceptions of the health benefi ts associated with fi bre, as well as the recognition of the potential information sources, a survey questionnaire was conducted with the total of 713 consumers. Results showed that the level of knowledge about DFs was not adequate. Internet was found to be widely used and identifi ed as one of the most appropriate information sources to encourage the consumption of DF. It was a favourable result that three-quarter of the respondents was interested in the topic of healthy food consumption; however, just less than half of them took into consideration the label information during their shopping decisions. To increase the consumption of DF and to support the responsibility and conscious consumer decisions steps must to be done (e.g. education of children, pointing out of the sources). For this purpose, modern information technology and communication channels fi tting to the consumers’ cultural and personal particularities can be utilized.

The study consisted of a descriptive cross-sectional survey undertaken on a sample of over 6 thousand participants, original from 10 countries. Statistical techniques like factor analysis and cluster analysis were applied to the data. Factor analysis showed that 10 out of the 12 variables used to measure the knowledge about DF could be grouped into 2 factors: one associated with health effects of DF and the other with its natural sources. The internal consistency of both factors was evaluated by the Cronbach’s alfa (0.854 and 0.644, respectively). Cluster analysis revealed that the participants could be divided into 3 groups: Cluster 1 – Good knowledge both about sources and health effects of DF; Cluster 2 – Good knowledge about the sources of DF but poor knowledge about its health effects; Cluster 3 – Poor knowledge both about sources and health effects of DF. The results were subject to analysis of stability by spliting the data set in 2 halfs. The cluster membership was found associated with living environment and level of education, but not with age, gender or country.
- Fiber, a component for health gastrointestinal endocrine systemPublication . Fazakas, Z.; Tarcea, M.; Guiné, RaquelDietary fiber was classified according to its solubility in an attempt to relate physiological effects to chemical types of fiber. Soluble fibers (B-glucans, gums, wheat dextrin, psyllium, pectin, inulin) were considered to have benefits on serum lipids, while insoluble fibers (cellulose, lignin, pectins, hemicelluloses) were linked with laxation benefits. More important characteristics of fiber in terms of physiological benefits are viscosity and fermentability. Viscous fibers (pectins, B-glucans, gums, psyllium) are those that have gel-forming properties in the intestinal tract, and fermentable fibers (wheat dextrin, pectins, B-glucans, gum, inulin) are those that can be metabolized by colonic bacteria. Objective: To summarize the beneficial effects of dietary fiber, as nutraceuticals, in order to maintain a healthy gastrointestinal system. Methods: Our study is a systematic review. Electronic databases, including PubMed, Medline, with supplement of relevant websites, were searched. We included randomized and non-randomized clinical trials, epidemiological studies (cohort and case-control). We excluded case series, case reports, in vitro and animal studies. Results: The WHO, the U.S. Food and Drug Administration (FDA), the Heart Foundation and the Romanian Dietary Guidelines recommends that adults should aim to consume approximately 25–30 g fiber daily. Dietary fiber is found in the indigestible parts of cereals, fruits and vegetables. There are countries where people don’t eat enough food fibers, these people need to take some kind of fiber supplement. Evidence has been found that dietary fiber from whole foods or supplements may (1) reduce the risk of cardiovascular disease by improving serum lipids and reducing serum total and low-density lipoprotein (LDL) cholesterol concentrations, (2) decreases the glycaemic index of foods, which leads to an improvement in glycemic response, positive impact on diabetes, (3) protect against development of obesity by increasing satiety hormone leptin concentrations, (4) reduced risk of developing colorectal cancer by normalizes bowel movements, improve the integrity of the epithelial layer of the intestines, increase the resistance against pathogenic colonization, have favorable effects on the gut microbiome, wich is the second genomes of the microorganisms, (5) have a positive impact on the endocrine system by gastrointestinal polypeptide hormonal regulation of digestion, (6) have prebiotic effect by short-chain fatty acids (SCFA) production; butyrate acid is the preferred energy source for colonic epithelial cells, promotes normal cell differentiation and proliferation, and also help regulate sodium and water absorption, and can enhance absorption of calcium and other minerals. Although all prebiotics are fiber, not all fiber is prebiotic. This generally refers to the ability of a fiber to increase the growth of bifidobacteria and lactobacilli, which are beneficial to human health, and (7) play a role in improving immune function via production of SCFAs by increases T helper cells, macrophages, neutrophils, and increased cytotoxic activity of natural killer cells. Conclusion: Fiber consumption is associated with high nutritional value and antioxidant status of the diet, enhancing the effects on human health. Fibers with prebiotic properties can also be recommended as part of fiber intake. Due to the variability of fiber’s effects in the body, it is important to consume fiber from a variety of sources. Increasing fiber consumption for health promotion and disease prevention is a critical public health goal.

Health status is directly linked with nutritional status, life style and food behaviour. There are 4 Health Indicators: Health Conscience, Health Information Orientation, Health-Oriented Beliefs, and Healthy Activities. People who are health conscious have a positive attitude towards preventive measures such as healthy eating. Health information refers to the extent to which an individual is willing to seek health information. At the cognitive level, health orientation is manifested in the field of health beliefs, which refers to the specific cognitions held by individuals about health behaviors. Also, health-oriented individuals are more likely to engage in healthy activities than other people in the population. The four aspects of the health orientation mentioned suggest the differences between individuals in the context of their sources of information in the health field. Our aim was to evaluate connections between social characteristics, nutritional status data and food behaviour, in a Romanian population sample. Material and methods. We followed a qualitative cross-sectional study based on screening of 751 Romanian adults from different regions of our country, which was carried out in 2018. We used a validated questionnaire from an international project, based on 26 specific questions, filled in online, regarding their nutritional and social data completed by their attitudes and information towards food behaviour. In our group, 68.7% were women, one quarter had over 50 years old, 82.3% were from urban areas and almost 2/3rds were higly educated. Results. We obtained a positive correlation between demographic parameters and the BMI, also healthy food behaviors were more frequent at women versus man. On the opposite, the confidence of men upon the information about healthy eating from the internet was higher than that of women. The number of hours/day spent watching TV or in front of the computer was positively correlated with age and also with their BMI. A high education level was significantly positively associated with healthier choices regarding nutrition practices. Health status in relation with nutritional status showed us that the most concerned group for their diet was those who suffered from different pathologies especially cardiovascular disorders. We obtained no significant associations among BMI, environment, current professional activity, responsibility for eating, and physical activity. Conclusions. Nutritionists, specialists in medicine, and food stakeholders should promote healthy diets through adequate sources of information aimed at target groups. Multidisciplinary teams should develop a more efficient strategy to motivate people to make healthy eating choices and improve population food behavior.
- Information, Perceptions and Motivations for Healthy Eating on a Group of European CountriesPublication . C.; Stubelj, M.; Klava, D.; Straumite, E.; Kruma, Z.; Tarcea, M.; Fazakas, Z.; Buicu, F.; Ruta, F.; Rus, V.This is an original research work that is a part of the EATMOT project, which aims to study the eating motivations of different nature in a set of countries all over the world. In this work will be presented some results of the project, regarding three major areas: perceptions about healthy eating, sources of information about healthy diet and healthy motivations for food choice. This is a longitudinal observational study carried out on a non- probabilistic sample with 4870 participants residing in 6 European countries: Hungary, Latvia, Lithuania, Portugal, Romania and Slovenia. Analysis of the data was performed using descriptive statistics and t-test for independent samples or ANOVA with Post-Hoc Tukey HSD, depending on the case. The results obtained allowed concluding that most of the participants have some knowledge about what a healthy diet entails, but still one third did not manifest an opinion for the questions related to healthy eating. Regarding the sources of information about healthy eating, internet was the source more frequently used by a significant part of the participants, while hospitals and health centres were quite irrelevant. This raises some concerns because the internet mighht not always be a reliable source of information. Finally, it was found that the health factors were more influential for the food choices in older people, females, widowed, retired and people working or studying in the area of nutrition.
- Knowledge about dietary fibres (KADF): development and validation of an evaluation instrument through structural equation modelling (SEM)Publication . Study design: The present study was a cross sectional study. Methods: The methodological study of psychometric validation was conducted with 6010 participants, residing in ten countries from 3 continents. The instrument is a questionnaire of self-response, aimed at collecting information on knowledge about food fibres. For exploratory factor analysis (EFA) was chosen the analysis of the main components using varimax orthogonal rotation and eigenvalues greater than 1. In confirmatory factor analysis by structural equation modelling (SEM) was considered the covariance matrix and adopted the Maximum Likelihood Estimation algorithm for parameter estimation. Results: Exploratory factor analysis retained two factors. The first was called Dietary Fibre and Promotion of Health (DFPH) and included 7 questions that explained 33.94 % of total variance ( = 0.852). The second was named Sources of Dietary Fibre (SDF) and included 4 questions that explained 22.46% of total variance ( = 0.786). The model was tested by SEM giving a final solution with four questions in each factor. This model showed a very good fit in practically all the indexes considered, except for the ratio 2/df. The values of average variance extracted (0.458 and 0.483) demonstrate the existence of convergent validity; the results also prove the existence of discriminant validity of the factors (r2 = 0.028) and finally good internal consistency was confirmed by the values of composite reliability (0.854 and 0.787). Conclusions: This study allowed validating the KADF scale, increasing the degree of confidence in the information obtained through this instrument in this and in future studies.

Hence, this work intended to evaluate the relations between some sociodemographic variables such as age, gender, level of education, living environment or country on the levels of knowledge about dietary fibre (KADF), its sources and its effects on human health, using a validated scale. Study design The present study was a cross-sectional study. Methods A methodological study was conducted with 6010 participants, residing in 10 countries from different continents (Europe, America, Africa). The instrument was a questionnaire of self-response, aimed at collecting information on knowledge about food fibres. The instrument was used to validate a scale (KADF) which model was used in the present work to identify the best predictors of knowledge. The statistical tools used were as follows: basic descriptive statistics, decision trees, inferential analysis (t-test for independent samples with Levene test and one-way ANOVA with multiple comparisons post hoc tests). Results The results showed that the best predictor for the three types of knowledge evaluated (about DF, about its sources and about its effects on human health) was always the country, meaning that the social, cultural and/or political conditions greatly determine the level of knowledge. On the other hand, the tests also showed that statistically significant differences were encountered regarding the three types of knowledge for all sociodemographic variables evaluated: age, gender, level of education, living environment and country. Conclusions The results showed that to improve the level of knowledge the actions planned should not be delineated in general as to reach all sectors of the populations, and that in addressing different people, different methodologies must be designed so as to provide an effective health education.
- Knowledge and attitudes towards dietary fibers - romania vs other european countriesPublication . Tarcea, M.; Fazakas, Z.; Ruta, F.; Rus, V.; Guiné, RaquelAim: The aim of our study was to evaluate the Romanian’s knowledge and attitudes regarding dietary fibers compared with other European countries. Materials and methods: We made a cross-sectional survey (part of multinational project from CI&DETS Research Centre, Instituto Politecnico Viseu, Portugal, with reference PROJ/CI&DETS/2014/0001) based on a questionnaire applied in 2015, over 670 Romanian consumers, focused on the attitudes and knowledge towards ingestion of foods rich in fibers. We used the software SPSS for statistics. Results: Our results showed that the knowledge about dietary fibers and also the ingestion of food products rich in fibers were low. The female participants ate more whole grains and fruits than males and pay more attention to food labelling, the Romanian people prefer to stay and eat home than at restaurants especially in rural areas, and the knowledge about fiber’s benefits was significantly related to high education and urban location. Comparing to other European countries, Romania had the highest level of knowledge about dietary fibers definition followed by Portugal, Turkey and Hungary, but the lowest regarding the fibers importance for health after Macedonia, Turkey and Latvia. Conclusion: We sustain the needs for more efficient community interventions and proper information about the importance of dietary fibers for our health and also for the dissemination of the nutritional standards among Romanian population.
