- Sources of information about dietary fibre: a cross-sectional survey of 1034 respondents from across CroatiaPublication . Sarić, MM; Ljubičić, M; Guiné, RaquelNutritional knowledge and attitudes are important for the consumption of healthy food. Well-informed consumers could have a higher chance to select food rich in nutrients like dietary fibre (DF), which is recognized as one of the major determinants for the improvement of health. Due to that reason, health institutions (health centres and hospitals); media (radio, television and internet); education institutions (schools) and education materials (books and magazines) as main sources of information through which people become aware or acquire knowledge of DF, were considered. Cross-sectional survey was conducted from October 2014 to March 2015 on a non-probabilistic sample of 1034 participants from Croatia. The instrument was a questionnaire of self-response, aimed at collecting information on knowledge, attitudes and sources about DF. Descriptive and inferential statistics were performed using SPSS 22.0 software considering a level of significance of 5%. The internet, the preferred source of information, got the highest scores for urban areas, university level of education and for female gender. The radio, the least scored source of information, was preferred by men and with lower education (primary school). People get most information through the internet due to easy access, but it could be detected as a possible risk given the impossibility to control information made public on the internet. It is very important to increase the impact of health centres and schools as adequately controlled public health informing sources.
- Effect of processing operations on carrots’ propertiesPublication . Guiné, Raquel; Florença, SofiaCarrots are rich in many bioactive molecules, which provide health benefits for the human body. Among these are carotenoids, vitamins, saccharides or phenolic compounds like anthocyanins and others. However, it is well known that when carrots are ingested fresh they provide the highest bioactivity, and the processing operations such as boiling, frying, freezing, drying, among others, induce some chemical and structural changes that may diminish the bioactivity of the compounds present. Furthermore, pre-treatment operations, like cutting or bleaching are also known to influence the quality of the food products. For example, the thermal pasteurization of carrot juice influences some vitamins and carotenoids. Also, the drying of carrots to incorporate into dried formulae greatly imparts the anthocyanins’ content. Hence, the objective of the present chapter was to present some recent findings about the influence of processing operations on the properties and bioactive compounds in carrots. To achieve this purpose, different pre-treatments and processing operations are discussed as to their effects on some typical carrot products.

- Romanian´s attitude regarding information sources about healthy food productsPublication . Cînpeanu, Oona Cristina; Tarcea, Monica; Czinege, Maria; Ruta, Florina; Rus, Victoria; Nemes, Levente; Guiné, RaquelIntroduction: Over time, the Romanian people have undergone various lifestyle changes adapted to food availability, sources of information and social status. Aims: The main purpose in this study was to evaluate the most widely used sources of information as regards to a healthy diet and favorite food products, in order to establish the perception of individuals about their trust in sources of information and their efficiency. Materials and Methods: We performed a study based on the assessment of lifestyle and food behavior, which consisted in a validated questionnaire of 26 questions, applied online, to a group of 821 adults, in Romania, in 2018. Results: We explored the potential benefit to the Romanian population, segmented by age, gender, background, graduate level and current professional activity, in determining the main sources for nutritional information and the level of trust in these sources. According to this study, the most used sources of information by Romanians in the increasing order of frequency were: radio (14.6%), medical field (16.9%), school (21.8%), family and friends (29.5%), TV (30.8%), magazines, books, newspapers (34.6%), internet (47.5%), most interested being educated young women from urban areas. Conclusion: Nutritionists and food stakeholders should promote healthy diet through adequate sources of information, using eLearning methods, aimed to target groups.
- Romanian´s perception about food behavior at risk in relationship with their social and cultural profilePublication . Georgescu, Mihai; Tarcea, Monica; Ruta, Florina; Cînpeanu, Oana Cristina; Rus, Victoria; Guiné, RaquelIntroduction: Nutrition is an individual choice but conditioned by the social context, health or illness, physical activity, access to care and information, and funding system. Aim: The main goal was to assess food behavior according to the social and cultural profile, to identify food behavior at risk, with the purpose of implementing prevention methods by including nutritional knowledge in health education campaigns. Material and methods: We performed a study based on the assessment of lifestyle and nutrition, along with social aspects, which consisted in a questionnaire of 26 questions, applied online, to a group of 821 adults, in Romania, in 2018. Results: The results revealed that socio-economic status is a contributing factor in food choices, people with low socio-economic status opted for low-price food, especially the elderly. Social influence has a big impact on the food intake, especially on the group under 18 compared to other age groups, who perceive meals as opportunities for relaxation and socialization in a higher percentage (62.5%). Teenagers who said their parents were authoritarian about healthy food, had have later on healthy diets, more regular breakfast and more vegetables in their menu. Conclusion: Improving eating behavior is based on changes in the psycho-social, economic and cultural characteristics of individuals, starting with educational interventions.
- Bulk-Tank Milk Longitudinal Serosurvey Reveals Decreasing Schmallenberg Virus Circulation in a Confined Population of Portuguese SheepPublication . Esteves, Fernando; Cruz, Rita; Nóbrega, Carmen; Santos, Carla; Ferreira, Ana S.; Petrovic, Tamas; Cardoso, Luís; Vala, Helena; Nascimento, Maria S.J.; Mesquita, João R.Introduction: In 2011, Schmallenberg virus (SBV) was first detected in dairy cattle herds in The Netherlands and Germany having since then spread across Europe. Today studies are starting to show a decrease in new SBV infections, a circumstance that raises alerts for possible re-emergence if ideal conditions for vector development occur. To assess the potential decrease in SBV circulation, we performed a 2-year longitudinal serological investigation for SBV infection at the herd level by using bulk-tank milk of a specific sheep breed from central Portugal. Materials and Methods: Bulk-tank milk samples from 68 flocks were collected in both 2015 and 2016, and lactosera were tested for IgG anti-SBV by EIA. Results and Discussion: Results show that in 2015, 92.6% (95% confidence interval [CI]: 83.9–96.8) of the bulk-tank milk samples were positive, whereas in 2016 only 77.9% (95% CI: 66.7–86.1 of the samples from the same flocks were positive. Differences in the 2015/2016 seroprevalences showed to be statistically significant (p = 0.027). This significant decrease at the herd level seems to be in agreement with reported data from other European countries and raise alerts, since increasingly favorable conditions (higher number of susceptible animals) are now present, potentially favoring SBV epidemics if improved conditions for midge replication occur in the future.
- A Indústria 4.0 e o seu Impacto no Tecido Económico Empresarial Português: O Caso da Região Dão-LafõesPublication . Antunes, Joaquim; Pinto, António; Reis, Pedro; Henriques, CarlaA criação de valor na indústria em países desenvolvidos está a ser direcionada pela quarta etapa de industrialização, denominada Indústria 4.0. As oportunidades são ilimitadas, mas os desafios são inúmeros criando dificuldades para as empresas na adoção dessas tecnologias. Este artigo, para além de uma revisão da literatura sobre a evolução das recentes tecnologias e respetivas aplicabilidades, pretende definir as principais medidas de atratividade regional como fatores de crescimento, suportando os líderes nas suas decisões de atração de empresas que perseguem a indústria 4.0. Para este objetivo apresentamos o resultado de catorze entrevistas aos principais responsáveis de empresas da região Dão-Lafões (Portugal) que já aplicam e/ou têm capacidades ou apetências de utilização das novas tecnologias nas suas indústrias. Os resultados mostram que as empresas têm já efetuado algum investimento em tecnologias da indústria 4.0, essencialmente ao nível do processo produtivo, com tendência para abranger diferentes áreas.
- Que importância têm os avós na proteção das crianças e jovens em risco, segundo a perspetiva das CPCJPublication . Angelina AlvesO presente trabalho tem como tema central a compreensão da importância dos avós que assumiram a criação dos seus netos e mais objetivamente entender qual o papel que podem ter na proteção das crianças/jovens considerados em risco. Para tal, realizou-se um estudo de caráter qualitativo, com recurso a entrevistas semiestruturadas realizadas a técnicos das Comissões de Proteção de Crianças e Jovens do Distrito de Viseu. Foi ainda realizada uma entrevista a uma avó e a um neto. A análise às respostas às entrevistas foi feita através de análise de conteúdo. Quanto aos resultados obtidos, estes são unânimes, na medida em que os avós são de facto considerados, na opinião profissional dos técnicos entrevistados e pertencentes às CPCJ, um fator de proteção para os seus netos, quer no papel de cuidadores não formais, quer no papel de retaguarda familiar. É um tema que carece de maior suporte empírico, nomeadamente em Portugal, tendo sido esse um dos maiores desafios da realização deste projeto. No entanto, pela sua pertinência e atualidade requer uma maior atenção e investigação futura, de modo a dar continuidade às investigações até então realizadas e, procurar dar respostas a questões que atualmente ainda não se vêm totalmente respondidas e mais estudos que contemplem o papel dos avós no apoio às crianças e jovens em risco.
- Implementação de um sistema de gestão da qualidade na resposta social ERPI da associação cultural, social, recreativa e desportiva "Os Melros"Publication . Paiva, Eufémia Maria Cruz; Marques dos Santos, PaulaA gestão da qualidade tem vindo, nos últimos anos, a revelar a sua importância nas organizações do terceiro setor. A crescente pressão sofrida pelas organizações sociais no que respeita à demonstração de responsabilidade, transparência e qualidade dos serviços, leva à necessidade de adoção de medidas no que toca à acreditação e certificação. O presente relatório de estágio tem como principal objetivo a realização de uma proposta de implementação de um Sistema de Gestão da Qualidade (SGQ) na resposta social Estrutura Residencial para Pessoas Idosas (ERPI) da Associação Cultural, Social, Recreativa e Desportiva “Os Melros”. Para tal, a partir da análise teórica de alguns dos principais autores sobre a qualidade, a gestão da qualidade e sobre os sistemas normativos da qualidade, pretende-se compreender os fundamentos do tema e perceber qual o referencial normativo que melhor se adequa à IPSS “Os Melros”. Durante a realização do estágio, foi possível avaliar as necessidades existentes na Instituição em estudo, mediante os Modelos de Avaliação da Qualidade do ISS, I.P. para alcançar a certificação Nível C e a realização de diversas atividades que conduziram à proposta do SGQ para implementação na ERPI da IPSS “Os Melros”.
