- Dar abrigo à dor e à perda: o papel do livro-álbum em contexto educativoPublication .
- Is Better Knowledge about Health Benefits of Dietary Fiber Related to Food Labels Reading Habits? A Croatian OverviewPublication . Ljubičić, M.; Sarić, M. M.; Rumbak, I.; Barić, I. C.; Sarić, A.; Komes, D.; Šatalić, Z.; Dželalija, B.; Guiné, Raquel P. F.The aim of this cross-sectional study was to determine the associations between health dietary patterns, knowledge, and consumption of dietary fiber (DF) with frequency of food label reading on food products with special reference to DF. The study was conducted in 2536 Croatian adults using an original questionnaire. Multiple linear regression models were used to assess associations between food label reading habits and predictor variables. Our study confirms the association between habits regarding the reading of labels on food products, especially in relation to information about DF with the sociodemographic factors of respondents, dietary food patterns and DF consumption, as well as knowledge and sources of information about DF. Women, individuals with a university-level education, and those living in an urban environment had more frequent labels used. Food habits as well as eating outside of the home were positive predictors while eating fast food was a negative predictor of food label reading. Knowledge about DF, especially about its health benefits, was also associated with food label reading. The interpretation of associations could help with the design of effective public health programs. Targeted education campaigns to educate and sensitize the population about food labeling and monitoring may improve general knowledge about healthy food and its benefits, which include indirect effects on the prevention of non-communicable chronic diseases.
- Machine Learning Methodologies, Wages Paid and the Most Relevant PredictorsPublication . Martinho, VítorThe agricultural sector worldwide has an economic dimension related to the remuneration of the production factors applied in the sector, an environmental contribution associated with the sustainability of rural places and a social dimension related to the employment creation and the consequent level of remuneration of the labour. The question here is about the level of wages paid in the agricultural sector across the European Union countries and about the main factors that may be taken into account to predict the level of these wages paid to agricultural workers. This research intends to select the models with better precision to predict the wages paid in the European Union agriculture and to suggest important predictors from the enormous number of indicators that may be identified in the farms. The findings obtained may be considered relevant support for the design of social and agricultural policies in the European framework.

Therefore, food security is a priority all around the world and across different sectors of society. Edible insects are recommended as a sustainable source of food of animal origin, but their acceptance is very diverse across cultures and countries. Therefore, our work investigated the perceptions of consumers about edible insects in 14 countries. We concluded that depending on origin, the level of knowledge is different, which is a starting point to design more focused campaigns to promote EIs, not only in non-insect-eating countries, but also in insect-eating countries. Better knowledge about the health effects of EIs and their nutritive value is a driver of change. Abstract Insects have been consumed for time immemorial in many regions of the globe. However, in other parts, they are not traditionally eaten. Because they are a more sustainable source of animal protein and provide valuable nutrients as well as bioactive compounds with beneficial effects on the human body, their consumption is encouraged. Knowledge can serve as a tool for better acceptance of insects as food. In this context, the present work investigated the knowledge about the nutritional value and health effects of edible insects in different countries. Data were collected by employing a questionnaire survey translated into the different languages of all participating countries and were treated using statistical tools. A total of 7222 responses were obtained. The results indicated that for many issues, the participants manifested a neutral opinion (neither agree nor disagree), but the participants who manifested agreement/disagreement were generally well informed. They were also able to identify untrue facts and answer accordingly by disagreeing. Factor analysis showed four groups of questions: nutritive value, negative perception and risks, safety and benefits of insects and contamination and harmful components. Finally, significant differences were observed according to the sociodemographic variables studies (sex, age, education, living environment and country), with age and country being the most influential of the sociodemographic factors on knowledge. Therefore, increasing knowledge is envisaged as an essential factor in augmenting the recognition of edible insects as a nutritional food, presenting health benefits apart from being a more sustainable source of animal protein when compared with beef or pork meats.
- Olive Oil Tourism: Innovative or Traditional Form of Rural Tourism?Publication . Pato, Maria LúciaOlive oil tourism is a unique and rapidly growing segment of agritourism, particularly popular in Mediterranean countries Portugal, where olive oil production has deep cultural and historical roots. At the heart of this form of tourism is the opportunity for visitors to explore the olive-growing process, engage in tastings, and immerse themselves in the traditions surrounding one of the world's most ancient food products. However, modern innovation is playing a pivotal role in revitalizing these traditions, making olive oil tourism not just a journey into the past but a dynamic exploration of the future. Based on a qualitative analysis of five farms of olive oil tourism, findings indicate the focus on tradition and values of the past as the main ingredient to promote the offer of olive oil tourism. Through this blend of old and new, olive oil tourism not only preserves heritage but also paves the way for a sustainable and vibrant future. Innovation through tradition is indeed a path that must be considered by scholars and practitioners in the promotion of olive oil tourism and related products.

- Enhancing Liquefaction Efficiency: Exploring the Impact of Pre-Hydrolysis on Hazelnut Shell (Corylus avellana L.)Publication . Cruz-Lopes, Luísa; Duarte, Joana; Dulyanska, Yuliya; Guiné, Raquel; Esteves, BrunoHazelnut shells (HS), scientifically known as Corylus avellana L. shells, are waste produced by companies that process nuts. The main objective of this study was to find an efficient way to maximize the chemical potential of HS by solubilizing the hemicelluloses, which could then be used to recover sugars and, at the same time, increase the lignin content of this material to produce adhesives or high-strength foams. In order to optimize the pre-hydrolysis process, two different temperatures (160 and 170 °C) and times varying from 15 to 180 min were tested. All the remaining solid materials were then liquefied using polyalcohols with acid catalysis. The chemical composition of hazelnut shells was determined before and after the pre-hydrolysis. All of the process was monitored using Fourier Transform Infrared Spectroscopy with Attenuated Total Reflectance (FTIR-ATR) by determining the spectra of solids and liquids after the pre-hydrolysis and liquefaction steps. The highest solubilization of hazelnut shells was found for 170 °C and 180 min, resulting in a 25.8% solubilization. Chemical analysis after the hydrolysis process showed a gradual increase in the solubilization of hemicelluloses as both the temperature and time of the reactor were increased. Simultaneously, the percentages of α-cellulose and lignin in the material also increased with rises in temperature and duration. FTIR-ATR allowed for the detection of significant spectral changes in the hazelnut shells from their initial state to the solid residue and further into the liquefied phase. This confirmed that pre-hydrolysis was effective in enhancing the chemical composition of the material, making it more suitable for the production of adhesives, polyurethane foams, or in the production of bioplastics and composite materials, combined with other biopolymers or synthetic polymers to enhance the mechanical properties and biodegradability of the resulting materials.
- Picturebooks in primary education: didatic paths of shared readingPublication . Melão, DulceThe central role of books in early childhood education and primary education is widely recognized, due to the ways in which they welcome children and give them access to paths of curiosity and imagination, promoting critical thinking. Aspects relating to the materiality of the book have become increasingly important, given the growing investment by publishers in high-quality aesthetic objects that make reading more appealing. Picturebooks are gaining relevance in this context, given the metamorphoses they are increasingly undergoing, fostering plural readings that echo multiple realities to be rediscovered by readers. This paper, taking as its raw material the picturebooks Little sheep give me wool, by Isabel Minhós Martins and My incredible knitting nana, by Rowena Blyth, seeks to investigate the role of peritexts in the construction of a multifaceted network of affections that can promote the cultivation of kindness and analyze the ways in which dialogues instigated by the text/image interconnection can support shared reading practices that increase the pleasure of reading, along paths that foster children's aesthetic sensibility. To fulfil these goals, the theoretical framework of this paper draws from specialized literature focused on the current relevance of the picturebook in education and the unusual characteristics it brings together, as well as curricular guidelines for primary education in Portugal. In addition, the contribution of international reports that focus on education for global citizenship is considered, to increase the understanding of the didactic paths suggested and to provide tools for thinking about the role picturebooks play for its implementation and development. The analysis carried out allow us to infer that both picturebooks provide ample material for exploring reading paths that can contribute greatly to building educational practices that are nourished by welcoming Others, as the guiding principle for responsible and active citizenship futures. The poetic nature of these picturebooks, coupled with the chords of tenderness that reverberate through them, could become one of the veins of such an axis, and hopefully nurture the cultivation of kindness. Providing pre-service and in-service teachers with the means to select picturebooks that bring together aesthetic enhancement and themes that promote it should therefore continue to be one of the fundamental objectives of their training, which is constantly changing in the face of the unexpected and growing challenges of today's society.
