- Análise agroecológica de caroços de cereja liquefeitos utilizando FTIR-ATRPublication . CruzA agroecologia, combina princípios ecológicos com práticas agrícolas, tem ganho crescente relevância no desenvolvimento de práticas sustentáveis. Esta área valoriza não apenas a produção eficiente de alimentos, mas também a utilização responsável e inovadora dos resíduos agrícolas. Neste contexto, a análise de produtos derivados de cultivos frutícolas, como a caroço de cereja (Prunus avium L.), mostra ser uma área promissora para a identificação de novas estratégias de valor acrescentado. O presente trabalho teve como objetivo analisar o material liquefeito de caroço de cereja doce (Prunus avium L.) e apresentar novas estratégias de valor acrescentado para as possíveis transformações deste produto. Utilizando a espectroscopia FTIR-ATR, foram investigados tanto o material liquefeito quanto os resíduos sólidos resultantes destas liquefações, além do material original de Prunus avium L. Os resultados obtidos demonstram que o material original e o resíduo sólido liquefeito apresentam espectros semelhantes, enquanto as principais diferenças foram observadas entre o material original e o material liquefeito. Estas diferenças indicam potenciais caminhos para o aproveitamento eficiente e sustentável dos resíduos, promovendo a valorização de subprodutos agrícolas e contribuindo para um modelo de produção mais ecológico e economicamente viável. Desta forma, este estudo insere-se na linha de pesquisas que visam fortalecer a sustentabilidade na agricultura, através da inovação e da otimização dos resíduos agrícolas.
- Análise elementar de sumos e águasPublication . Paula, Francisco; Valente, Luísa; Duarte, Armando; Fragata, Anabela; Reis, Fernando; Guiné, RaquelOs frutos e vegetais contêm diversos elementos minerais na sua composição, pelo que a sua ingestão pode melhorar a regulação mineral, reduzir as doenças cardiovasculares e o risco de contrair certos tipos de cancro. Também o crescente consumo de sumos de fruta tem sido associado à redução do risco de contrair vários tipos de cancro [1] e daí o interesse público nestes produtos. Contudo, a equivalência à fruta fresca, em benefícios para a saúde, tem sido questionada devido ao elevado nível de processamento envolvido na produção de sumos [2]. A concentração de seis elementos: Cd, Cr, Pb, Ni, Zn e Fe foi medida em sessenta e sete amostras de sumos de fruta 100 %, duas amostras de refrigerantes, dez amostras de concentrados de sumos e sete amostras de águas de diluição utilizadas no processamento dos sumos. As amostras de sumos representam numa perspetiva bastante abrangente o mercado Português de sumos de fruta 100 %. Os refrigerantes concentrados e águas de diluição foram cedidos por duas empresas fabricantes de sumos Portuguesas. As concentrações elementares foram medidas pelas técnicas de FAAS e GFAAS e foi medido também o grau Brix dos sumos. Os fatores: fruta, percentagem de fruta, origem, agricultura, tratamento, embalagem, conservação e processo foram obtidos por informação do fabricante nos rótulos dos produtos e por contacto direto. Caracterizou-se o mercado em termos da concentração desses elementos e caracterizou-se a sua diluição comparando-a com valores de referência do mercado Europeu. Mediu-se o grau de associação entre os diversos parâmetros e a concentração final elementar dos sumos e utilizou-se a análise de agrupamentos, a análise de correspondência múltipla e a análise fatorial para reestruturar a matriz de dados. Dos resultados obtidos, os sumos de fruta apresentam a seguinte ordem de grandeza nas suas concentrações elementares: Cd < Cr < Pb < Ni < Zn < Fe. Detetou-se uma forte associação entre a concentração elementar dos sumos de fruta 100 % e a concentração elementar dos concentrados e águas de diluição utilizadas no seu processamento.
- Chemical Composition and Optimization of Liquefaction Parameters of Cytisus scoparius (Broom)Publication . In this context, this work aims to determine possible valorizations of Scotch Broom Cytisus scoparius (L.) Link. This species harvested in the Viseu region was used in the present study. The eco-valorization of these renewable resources was made by conversion into liquid mixtures that can later be used in the manufacture of valuable products. For a better understanding of the results obtained, a chemical characterization of the Cytisus scoparius branches (CsB) was made. The ash content, extractives in dichloromethane, ethanol and water, lignin, cellulose and hemicellulose of the initial material were determined. Liquefaction was made in a reactor with different granulometry, temperatures and time. Results show that Broom is mainly composed of cellulose (36.1%), hemicelluloses (18.6%) and lignin (14.6%) with extractives mainly soluble in ethanol, followed by water and a small amount in dichloromethane. Ashes were around 0.69%, mainly composed of potassium and calcium. Generally, smaller size, higher solvent ratio, higher temperature and higher time of liquefaction lead to higher liquefaction. The highest percentage of liquefaction was 95% which is better than most of the lignocellulosic materials tested before.
- O comércio tradicional como fator de atração turística. O caso do eixo urbano do DouroPublication . Fragata, Anabela; Teixeira, Helena; Antunes, Joaquim; Trindade, CátiaO comércio tradicional desempenha um papel fundamental e estruturante na vida das cidades, com especial destaque para as cidades intermédias do interior. Estas atividades económicas são dinamizadoras dos centros urbanos, sendo fundamentais para sustentar o desempenho da atividade turística. Este trabalho tem como objetivo principal perceber a gestão das dinâmicas na área do comércio tradicional, no que se refere a fatores de sustentabilidade das empresas que estão no ativo há, pelo menos, 15 anos, na região do Eixo Urbano do Douro. Um novo instrumento de pesquisa foi construído, com base na literatura e em entrevista com profissionais do Observatório Económico e Social da Associação de Municípios Douro Alliance. A metodologia utilizada teve por base a inventariação do total de empresas ligadas ao comércio tradicional, seguida da aplicação do questionário a uma amostra de 173 empresas. Os resultados permitiram constatar que estas empresas se encontram num nível atrasado de utilização de novas tecnologias, não valorizam os créditos bancários, utilizando fundos próprios para o seu desenvolvimento, preocupam-se com os prazos de pagamento dos clientes, apresentam baixo nível de outsourcing e de participação em associações comerciais ou empresariais e procuram adaptar os produtos/serviços às alterações da procura de residentes e turistas.
- Comparison of milk consumption habits across two European countries: Pilot study in Portugal and FrancePublication . Guiné, Raquel P. Milk is a very complete food with important nutrients that can sup- port life. However, the patterns of consumption of milk have been shifting. On one hand, due to the increase in the number of people with intolerances (to lactose, for example), and on the other hand, due to some trend to avoid foods from animal origin owing to speci fi c convic- tion (like animal welfare, for example). In this context, this study focused on the milk consumption patterns in two di ff erent European Countries and the evaluation of pos- sible di ff erences. The object of study was milk obtained from animal sources, namely, cows, and no other derived fermented dairy products were included. For the develop- ment of the study, a questionnaire survey was applied to a sample of 542 participants from both countries using the Internet. The results showed that a high percentage of participants in both countries consume milk regularly, and the usual amount varies between 125 and 250 mL per day. For those who do not consume milk, the most relevant reason pointed out in both countries was because they do not feel the need to consume it. While in France, a high percentage also do not consume because they do not like milk, and in Portugal, a high percentage do not consume milk due to lactose intolerance. The most con- sumed is semi-skimmed milk, and preferences are towards consuming plain milk or consuming it with chocolate. Signi fi cant di ff erences were found in the consumption of white brands, which are preferred in France, while in Portugal, consumers prefer commercial brands, as well as the preferred package, tetra packs for the Portuguese, while the French prefer plastic bottles. In conclusion, although the results showed some similar trends among the participants from both countries, some di ff erences were also identi fi ed that can be used to better plan public policies in both countries.

Objectivo: O objectivo deste artigo é examinar empiricamente os determinantes que influenciam a intenção de uso continuado de um consumidor que utilize carteiras digitais em Portugal. Métodos: Os dados foram analisados através de análises exploratórias e confirmatórias e foi obtido um Modelo de Equações Estruturais, depois de obtidas respostas de 185 inquiridos portugueses. Resultados: Os dados revelaram que a expectativa de desempenho, a expectativa de esforço, as condições facilitadoras e a confiança percebida são determinantes importantes da intenção comportamental das carteiras digitais e terão um impacto positivo na intenção de uso continuado das mesmas. A reputação percebida e a segurança percebida também são determinantes da confiança percebida. Conclusão: A melhoria contínua nestas áreas é imperativa, para melhorar o desempenho da carteira digital e torná-la competitiva em relação às transações alternativas eletrónicas.

While in some regions of the world, EIs are part of the gastronomic and cultural traditions, in other regions, people are not so receptive to this type of food, and some people even express some disgust towards it. Hence, this research focused on the habits of the participants regarding the consumption of insects as well as their perceptions about EIs being or not a part of the local culture or gastronomic patrimony. A questionnaire survey was implemented in fourteen countries (Brazil, Croatia, Greece, Latvia, Lebanon, Lithuania, Mexico, Poland, Portugal, Romania, Serbia, Slovenia, Spain, and Turkey), and globally, 7222 adult participants responded to the questionnaire. SPSS software (version 28) was used to process the data and carry out chi-square tests and Factor Analyses (FA). The obtained results showed significant differences between countries for all the questions included in the survey, either those regarding the habits of the participants or their opinions about the facts linked with EI tradition or cultural aspects. It was found that participants from Mexico consume EIs more than in all other countries and that strong motivations that would lead to consumption among those who do not consume include curiosity and food shortage. The solution obtained with FA considering the ten statements of the scale consisted of two factors: F1—Culture and Tradition of EIs (α = 0.675) and F2—Acceptance of EIs (α = 0.614). In conclusion, the consumption of EIs and the perceptions of people are highly variable according to geographic location and cultural environment.

Hence, this study intended to examine the perceptions of participants from different countries about the commercialization and economic and social impacts of edible insects. The study was made using a questionnaire survey, and data were collected in Brazil, Croatia, Greece, Latvia, Lebanon, Lithuania, Mexico, Poland, Portugal, Romania, Serbia, Slovenia, Spain, and Turkey. The final number of received answers was 7222 participants. For the treatment of the results, different statistical techniques were used: factor analysis, internal reliability by Cronbach’s alpha, cluster analysis, ANOVA to test differences between groups, and Chi-square tests. The results obtained confirmed the validity of the scale, constituted by 12 out of the 14 items initially considered, distributed by 4 factors: the first related to the economic impact of EIs, the second related to the motivation for consumption of EIs, the third related to the places of purchase of EIs, and the fourth corresponding to a question presented to the participants as a false statement. A cluster analysis allowed identifying three clusters, with significant differences between them according to all the sociodemographic variables tested. Also, it was found that the participants expressed an exceptionally high level of agreement with aspects such as the difficulty in finding EIs on sale, knowledge acting as a strong motivator for EI consumption, and the role of personalities and influencers in increasing the will to consume EIs. Finally, practically all sociodemographic variables were found to be significantly associated with perceptions (country, sex, education, living environment, and income), but not age. In conclusion, the perceptions about EI commercialization were investigated and revealed differences among samples originating from different countries. Moreover, the sociodemographic characteristics of the participants were found to be strongly associated with their perceptions.

The pre-harvest factors (origin, fruit, and agriculture) and the post-harvest factors (blending, packaging, conservation, pasteurisation, and process) were evaluated according to the manufacturers information and were correlated with the elements concentrations of fruit juices. A strong relationship was detected between the fruit species used for the juice production (i.e. pre-harvest factor) and their elements concentrations. Furthermore, multiple correspondence analysis was used for reducing the data dimension by grouping the factors. The zinc concentration was detected as a potential proxy for the identification of the fruit juices manufacturing process.
