- O abandono escolar pela comunidade cigana e seus reflexos nos tribunais superiores em PortugalPublication . Mendes, FranciscoPara o CERD (2000), a comunidade Roma é objeto de discriminação na sua expressão mais acentuada, manifestando-se no plano da educação pelo forte absentismo e abandono escolar. Neste estudo pretendeu-se conhecer o reflexo do abandono escolar da comunidade cigana nos tribunais superiores, designadamente da Relação. Procedeu-se a uma pesquisa tendo sido identificados três acórdãos. Em dois desses acórdãos o abandono escolar não se constitui como o centro da decisão do tribunal e por isso foram desconsiderados. Dado o carácter paradigmático do Acórdão do TRL, procedeu-se à sua análise. Em síntese, uma rapariga de etnia cigana atingiu a menarca. Para os pais, de acordo com a tradição e cultura cigana, a criança deveria abandonar a escola como forma de preservar a sua “pureza”. A primeira instância decidiu que a frequência da escolaridade obrigatória cedia perante a cultura e tradição ciganas. O tribunal superior revogou a decisão impondo o “apoio junto dos pais”. Prevaleceu, pois, o superior interesse da criança.
- A abordagem interdisciplinar da Educação Sexual no 1.º ciclo do ensino básicoPublication . Lacerda, Carla; Cardoso, Ana Paula; Rocha, JoãoNum mundo em constante mudança, em que a especialização dos saberes é cada vez maior, a interdisciplinaridade surge como uma resposta promissora, na medida em que permite a quebra de fronteiras das disciplinas e a articulação dos saberes, proporcionando ao aluno uma visão mais abrangente dos mesmos. Um dos domínios em que a interdisciplinaridade assume particular relevância, nomeadamente no 1.º Ciclo do Ensino Básico é o da Educação Sexual, uma temática multidimensional e abrangente, cujos conteúdos “podem ser interligados, sem artificialidade, com os de Língua Portuguesa, do Estudo do Meio, da Matemática e das Expressões” (Ministério da Educação e Ministério da Saúde, 2000, p. 72). Neste contexto, procurámos averiguar se a prática pedagógica interdisciplinar é facilitadora das aprendizagens no 1.º Ciclo, nomeadamente no que se refere à temática da Educação Sexual. Em termos empíricos, realizámos uma investigação sobre a própria prática, no âmbito do estágio no 1.º Ciclo do Ensino Básico, com alunos de uma turma do 2.º ano de escolaridade, abordando de forma interdisciplinar três blocos desta temática: hábitos de higiene, diferenças entre o corpo masculino e o feminino e questões de género. Para a recolha de dados, recorremos à observação naturalista e ao registo de notas de campo, bem como ao inquérito por questionário. Os dados obtidos permitem concluir que a abordagem interdisciplinar da Educação Sexual promove as aprendizagens no 1.º Ciclo, em concordância com documentos de referência que defendem essa prática pedagógica como sendo facilitadora das mesmas. Comparando os dados obtidos no pré-teste e no pós-teste, verificamos uma mudança nos conhecimentos prévios dos alunos, nos vários blocos abordados, com maior destaque no que concerne às diferenças entre o corpo masculino e feminino. De sublinhar também o facto de os alunos se envolverem ativamente nas aprendizagens e demonstrarem curiosidade e interesse em saber mais.
- Abriendo las puertas de las instituciones de educación superior: aprendizaje experiencial en el curso de Educación SocialPublication . Araújo, Lia; Fonseca, Susana; Amante, Maria JoãoIn an increasingly aging world, the effort to prepare future professionals for work with older persons starts to be a concern of higher education institutions. This article comments on the importance of experiential learning for preparing Social Education students to intervene with older people and presents an activity piloted at a Polytechnic University of Portugal. About 40 older persons from nursing homes came to a class in order to experiment the games developed during previous classes by the students. In order to understand the benefits of experimenting the games with older persons for the students, 37 students have answered a questionnaire about the importance of this learning activity. Findings on their assessment showed that the experience was generally positive, with all students rating as very important/important for their learning. Through open-ended questions the most mentioned benefits of the activity were the opportunity to social interact, to have contact with older persons, to develop in practice something theoretically conceived in the classroom, and to stimulate older persons. Through closed-ended questions the level of accordance with the pedagogical aims of the activity were very high, with 32 (86.5%) totally agreeing that it served to interact with older persons and 24 (64.9%) agreeing that the activity made them to realize if they like this area of intervention. The authors describe the impact this kind of activity may have on the knowledge about older persons, skills for motivating a group activity and also students’ beliefs, attitudes, and values related to working with older adults.

However, in Europe, this alternative source of nutrients is still new, and consumers react differently to this offer. With the regulation of some raw materials prepared from insects in Europe, a need has arisen for their adaptation in the food industry. Today it is important to understand that consumers in Europe are not ready to choose insects as a main food source. However, the inclusion of raw materials prepared from insects into traditional food product formulas could be promising. Despite the fact that raw materials prepared from insects are considered to be of high biological value, when incorporating them into traditional food formulas, it is important to control not only the nutritional value and sensory properties of the final product, but also to anticipate what undesirable changes may occur during technological processes. One of such undesirable phenomena could be the assumption that enriching cereal products with raw materials high in protein might influence changes in the concentration of Maillard reaction products. We decided to start our research with an assessment of the acceptability of newly proposed raw materials – insects - by consumers. In the following stages, Acheta domesticus flour (unfermented and fermented with Lactiplantibacillus plantarum No. 122 and Lacticaseibacillus casei No. 210 strains) was used to enrich bread and biscuits, and their impact on product quality parameters and acrylamide concentration was assessed. Additionally, various parameters of unfermented and fermented Acheta domesticus flour were evaluated (pH, lactic acid bacteria count, color coordinates, fatty acid, volatile compound, and biogenic amine concentration). The tested product groups were prepared by adding to the main recipe different quantities of unfermented and fermented Acheta domesticus flour (into the main wheat bread formula - 10, 20, 30%; into the main biscuits formula (280 g of wheat flour, 100 g of margarine, 50 g of saccharose, 3 g of vanilla sugar, 50 g of eggs, 1.5 g of salt and 2.0 g of baking powder - 40, 80, and 100 g). An assessment of the acceptability of insects by consumers showed that 70.7% of the respondents had never eaten insects. A fermentation experiment demonstrated that in most cases, fermentation reduced the biogenic amine concentration in Acheta domesticus flour and influenced the volatile compound profile in both Acheta domesticus flour and cereal products (wheat bread and biscuits). Most of the wheat bread sample groups prepared with untreated and fermented Acheta domesticus flour showed higher acrylamide content compared to the control bread group, except for the group with 10% fermented Acheta domesticus flour. However, the opposite tendency was found for biscuit samples. The lowest acrylamide concentration (84.1 µg kg-1) was observed in biscuit samples containing 40 g of No. 210 fermented Acheta domesticus flour.Due to the decrease in acrylamide concentration in biscuits, fermented Acheta domesticus flour can be recommended for the manufacture of such products. For wheat bread preparation, 10% fermented Acheta domesticus flour is recommended, as most wheat bread sample groups prepared with untreated and fermented Acheta domesticus flour showed higher acrylamide content compared to the control bread sample groups.
- Action research and teacher training challenges in Polytechnic Higher EducationPublication . Cardoso, Ana PaulaAction research is a methodological approach often used in initial and continuous teacher training courses, namely at polytechnic schools. For this reason we try to inquire: "To what extent is action research a useful methodology in training teachers in polytechnic higher education?" The analysis of one’s own experience of training in two training courses in the Viseu Higher School of Education, which took place from 2001-2006, as well the analysis of final research work developed allow us to conclude, among other aspects, that this methodology has showed to be attractive to many teachers and represents a contribution to a greater openness to change and educational innovation. Not intending to generalize these data beyond the context under analysis, we consider that they suggest the usefulness of action research in teacher training at the level of higher education and thus recommend the use of this methodological strategy.
- Actividade física em crianças e jovens em contexto escolar e de lazerPublication . Mendes, Francisco; Martins, Emília; Fernandes, RosinaResumo — É propósito deste estudo contrastar os níveis de actividade física em crianças e jovens, nos contextos de escola e lazer, em função de variáveis sócio demográficas (idade e género) e contextuais (prática de actividade desportiva de pais e amigos). Para o efeito, utilizou-se uma amostra de 55 sujeitos, de idades compreendidas entre os 10 e 20 anos, de ambos os géneros. Os dados foram recolhidos em Viseu, a partir do Questionário sobre actividade física habitual - filhos (Baecke et al.,1982). A análise dos dados foi realizada no SPSS 20, tendo-se utilizado as técnicas estatísticas adequadas em função do tipo de escala e da natureza das variáveis. Diferenças significativas (p=.05) evidenciaram uma diminuição da prática da actividade física com a idade, tal como noutros estudos (Henriques, 2000; Rodrigues, 2001), bem como uma não diferenciação por género (Cardoso, 2000). Os resultados denotam, ainda, um apreciável nível de concordância entre a influência da prática desportiva dos amigos nos níveis de prática dos sujeitos da amostra e a percepção destes sobre a mesma. A reflexão decorrente destes resultados revela-se fundamental, atendendo à importância da promoção da saúde em contextos educativos formais e não formais, a partir do incremento de práticas adequadas de actividade física.
- Adaptation of the baby to the day-care context: the importance of communication grammarPublication . Enrolment of an infant in this context provides access to situations which differ from those within the family setting. This calls on resources of adaptation on the part of small children, families and professionals. In the nursery, the infant’s day is organized around educational experiences and permanent care that are unique moments to promote didactic interactions and diversified learning. The aim of this research is to identify the strategies and procedures used in the context of the nursery to promote infants’ adaptation and well-being. Interactions between infants (aged 6 to 11 months) and two professionals (at reception, departure and during routine care and education), as well as with family members (upon arrival at the nursery and on returning home), were observed. The professionals were also inquired regarding the strategies used for infants’ adaptation in this context with a view to promoting their well-being. It is a qualitative and exploratory study with recourse to direct observation and semi-structured interview. The strategies used to promote adaptation which emerged from the observations made were triangulated with the results of the interviews. The following results as regards valued strategies have been highlighted: emotional literacy (the professional’s adaptation of responses to the infant’s individuality, the professional’s socio-affective skills); communication with the family (the exchange of information, harmony of procedures, transactional objects) and type of communication (verbal and nonverbal). The results show the importance of using a communicational grammar to safeguard the infant’s adaptation process to a new socio-educational context nature, consequently helping to promote well-being.
